![]() usadeepsouth.com I made this recipe up because I love sweet potatoes and I love soup. It's fast and easy when you're hungry. I use one large can of potatoes (the tall can like a can of grapefruit juice) that I don't drain. You can also bake fresh ones. I rub mine with olive oil and bake about 3 lbs (5 medium size) at 400 degrees for 90 minutes. Let cool and cut into chunks and put in the pot with water to just cover. Of course, if you are a vegetarian, use water instead of stock.
1 (one) large can sweet potatoes, undrained 1 1/2 cup water or chicken stock 1 cup sugar 1/2 stick butter 1 cup toasted nuts Zest and juice of 1 (one) orange 1 teaspoon cinnamon 1/4 teaspoon nutmeg, please use fresh if you can Big pinch salt 1/4 teaspoon fresh ground black pepper 1 teaspoon vanilla 2 Tablespoons Cointreau (optional) 1 cup cream (optional) Heat liquids and potatoes to a medium to high boil and allow to cook until potatoes begin to fall apart and thicken the soup, about 20 minutes. Add the next 8 ingredients. Simmer until thick, about 10 more minutes. Add cream and allow to boil one more time. Take off fire and add vanilla and booze. Dark rum is also good in this soup and the cream is up to you. Try it for a special occasion.
